As a child, Dominic Grundy envisioned himself stepping onto the field as a professional footballer for Manchester United. “I wasn’t the academic type,” Dominic reflects. “I thrived in practical environments, and working in a kitchen as part of a team seemed like the perfect fit for me.”
Starting his career at Paul Heathcote’s restaurants in Warrington, Dominic worked across a range of kitchen styles – from fast food to Michelin-starred fine dining. The broad experience laid the foundation for his future career, equipping him with the skills to handle the pressures of any kitchen.
The fine dining years: From London to Australia
Dominic’s big break came when he moved to London. It was here, amidst the high-stakes environment of La Gavroche, one of London’s most prestigious French fine dining restaurants, that Dominic truly began to refine his craft. Under the mentorship of chefs like Marco Pierre White and Gordon Ramsay, Dominic was immersed in the kind of intense culinary training that would shape his approach to food for years to come.
“Working there was like a dream come true,” he says. “It was hard work—long hours, intense service – but it was where I truly honed my skills, learning the art of fine dining and the precision required in such a high-pressure environment.”
After a few years in Perth, Dominic’s journey led him back to the UK, where he expanded his expertise as an Executive Chef in country hotels across the Lake District and Yorkshire, and in city-center restaurants in Manchester and Liverpool. While working at The Lowry in Manchester, he had the privilege of cooking for his boyhood heroes – the Manchester United football team.
The call of Victoria: Bringing global experience to Flowerdale Estate
Dominic’s journey brought him back to Victoria after the COVID-19 travel restrictions were lifted. The opportunity to work at Flowerdale Estate, in the heart of Victoria’s Yarra Valley, allowed Dominic to tap into the region’s abundant local produce. “Being in Victoria means I have access to some of the freshest ingredients around, and it’s a real privilege to incorporate that into my menus,” he explains.
The estate’s kitchen garden provides a wealth of seasonal vegetables and herbs, allowing Dominic to experiment with unique ingredients and continue his farm-to-table approach to cooking. He thrives on introducing diners – whether adventurous or conservative – to new tastes and combinations, always with the goal of creating memorable experiences.
Gracie’s Restaurant: Where classic meets contemporary
Dominic’s style of cooking is all about adaptable, approachable food. His love for fusion cooking shines through as he blends classic French dishes with Asian-inspired flavours. “There are no hard and fast rules when it comes to creativity in the kitchen. I spend a lot of time exploring the fusion of European dishes with Japanese methods,” he explains.
One of his standout dishes is the Blue Swimmer Crab, Cockle, and Prawn Arancini Kiev. Dominic shares, “This dish is wholesome and satisfying, and its elements – like the Café de Paris butter – can be used in other meals, whether on steak, grilled fish, or as a salad dressing.”

Final thoughts
For Dominic, the hospitality industry is more than just a career – it’s a lifelong passion. “Food has a universal power to bring people together,” he says. “Creating memorable experiences for guests, sharing in their enjoyment of a great meal, is incredibly fulfilling. There’s no better feeling than seeing someone smile after a delicious meal.”
