UK Chef Dominic Grundy Appointed Executive Chef of Flowerdale Estate
FUSING CLASSIC TECHNIQUES WITH LOCAL FLAVOURS
Classically French trained British Chef Dominic Grundy has journeyed from the rarefied space of one of UK’s uppermost restaurants to the estate of a historic 1842 Homestead nestled within the breathtaking expanse of regional Victoria’s Valley of 1000 Hills.
Recently taking the helm as Executive Chef at Gracie’s Restaurant within the award-winning Flowerdale Estate in Strath Creek, Dominic is inspired by the idyllic surrounds of the area including Macedon Ranges and Yarra Valley.
“My approach to cooking and fine dining has always focussed on maximising the flavours of the best fresh produce. Simple yet bold flavours,” he says. “Working in this beautiful and produce-rich area, I have been able to explore and connect with local and regional growers of extraordinary quality produce.”
Dominic’s career began at the iconic Le Gavroche Restaurant in Mayfair, London, where he trained under Michelin-starred Chef Patron Michel Roux Jr. Le Gavroche was the first UK restaurant to be awarded one, two, and then three Michelin Stars. Dominic has worked with culinary lumunaries Paul Heathcote and James Holah at The Longridge Restaurant; Michelin star chef Paul Kitching at Juniper in Manchester, and more recently held the position of Head Chef for Panoramic 34 – a breathtaking fine dining restaurant on the 34th floor of the West Tower in Liverpool.

Situated on 130 acres, Flowerdale Estate is a popular destination for casual and fine dining. Open Friday through to Sunday, the 60-seat Gracie’s Restaurant offers the finest regional produce enjoyed among the picturesque surrounds of the Estate during the day and starry skies of a country Victorian evening.
The Estate’s stunning architecturally designed indoor/outdoor event space, The Pavillion, seats 200 plus and offers yet another superb venue for Flowerdale Estates special events including weddings, conferences, their much loved monthly high tea events, product launches, wellness retreats, private dining experiences, whimsical pallet picnics and bespoke celebrations.
Beyond dining, Flowerdale Estate has a range of accommodation offerings including two historic homestead suites, 26 estate king rooms, a fully self-contained four bedroom Guest House and four newly opened luxury glamping eco tents.
